Salvia officinalis — White Sage
White Sage is a hardy perennial shrub with silvery, aromatic leaves long valued for both culinary and traditional uses. Its flavour is earthy and savoury, making it a classic seasoning for roasted dishes, stuffings, and teas. Small lavender-blue flowers rise above the foliage in summer, attracting bees and other pollinators. Thriving in full sun and well-drained soil, sage is drought-tolerant once established and adds both structure and fragrance to the garden.

HOW TO GROW:
Transplant (recommended): Start indoors 6–8 weeks before frost, set out 18–24" apart. Direct seed: Sow after frost, 1/4" deep, thinning to 18–24". Prefers sandy, well-drained soil. Light spring fertilizer is sufficient. Pinch young plants to encourage branching. Harvest leaves as needed, especially before flowering for best flavour.
