Heavy, vigorous white-stem pac choi. Dark-green leaves are supported by thick, sweet, white stalks that are mild and juicy with a delicate flavour. Joi Choi pac choi seeds can be planted in cool soil. Cover with cloche if planting in very early spring, as plants will bolt if seedlings are exposed to cold temperatures. Sow numerous times at two to three week intervals to enjoy a long harvest window.

HOW TO GROW:

Planting:

  • When to Plant: Bok choy is a cool-weather crop that can bolt (go to seed) in extreme heat or cold. The ideal time to plant is in the spring after the last frost and in late summer for a fall harvest. You can make successive plantings every 2-3 weeks for a continuous supply.

  • Where to Plant: Bok choy prefers a location with full sun but can tolerate partial shade, especially in hot climates where afternoon shade can help prevent bolting.

  • Sowing Seeds: Sow seeds directly into the garden about 1/4 to 1/2 inch deep. Space them 1-2 inches apart and then thin them to 6-12 inches apart once they are a few inches tall, using the thinnings in salads. This is a crucial step to give the plants enough space to develop. You can also start seeds indoors 4-6 weeks before the last frost and transplant them once the danger of frost has passed.

Soil & Fertilizing:

  • Soil Preference: Bok choy thrives in rich, fertile, well-drained soil with a pH of 6.0 to 7.5. Before planting, amend the soil with compost or well-rotted manure to provide nutrients.

  • Fertilizing: Bok choy is a heavy feeder. If your soil is not rich, you can apply a balanced fertilizer. Avoid high-nitrogen fertilizers that can cause rapid, leafy growth but not a strong plant.

Watering:

  • Keep the soil consistently moist. Bok choy requires a steady supply of water to prevent bolting and to keep the leaves tender and sweet. Water at the base of the plant to avoid getting the leaves wet, which can lead to fungal diseases. A layer of mulch can help retain soil moisture.

Pests & Diseases:

  • Pests: Bok choy is a member of the cabbage family and is susceptible to pests like cabbage worms, flea beetles, and aphids. Using a floating row cover can help to protect young plants.

  • Diseases: The most common disease is a fungal disease caused by overwatering or high humidity. Ensure good air circulation and avoid overhead watering.

Harvesting:

  • Bok choy is a fast-growing crop and can be ready to harvest in as little as 45-60 days.

  • You can harvest the entire plant by cutting it at the soil line with a sharp knife.

  • Alternatively, you can harvest the outer leaves as needed and allow the inner leaves to continue to grow, which allows for multiple harvests from one plant.
