Thyme is the classic winter-hardy herb, producing dense, woody stems covered in tiny evergreen leaves. Its complex flavour is both sweet and pungent, with subtle notes of pine and citrus, making it indispensable in savoury cooking. Perennial in Zones 5–8, thyme thrives in full sun and well-drained soil, with mulch recommended in colder climates. Beyond its leaves, the small edible flowers carry a mild thyme flavour and attract pollinators, adding beauty as well as utility to the garden.
