Rosmarinus officinalis — Rosemary
Rosemary is a classic Mediterranean herb, valued for its pine-scented, savoury flavour and evergreen, needle-like foliage. Highly aromatic, it is a staple in roasted dishes, breads, and marinades, while its small flowers provide a fresh garnish with bold rosemary notes. Thriving in full sun and well-drained soil, rosemary can be grown in containers or garden beds, though germination is naturally low and variable. Both ornamental and culinary, it is a favourite with cooks and gardeners alike.

Transplant to individual containers or thin when plants have 4 true leaves. Transplant outdoors after the last frost in rows 18-36" apart. In-row spacing is 8-10" apart where it will be grown as an annual and 24-36" apart where it will be grown as a perennial. Needs well-drained, sandy soil and full sun. Fertilize lightly. Pinch for bushiness. Harvest sprigs anytime once established. Rosemary may overwinter in colder climates if mulched or dug up and transferred to containers in a protected structure.
